Eggplant Casserole Recipe!

So this recipe is super easy, and healthier than your typical Eggplant Parm! You can add or leave out ingredients, and really make this your own!
What you need!
1 Eggplant.
1 Small onion.
1 Bell Pepper.
Mushrooms.
Tomato.
Tomato sauce.
Garlic.
Olive Oil.
Salt and pepper.
Shredded Mozzarella cheese.
(Optional) Chili pepper flakes.

Directions:
Preheat oven to 400 degrees. On medium heat, heat an oven safe pan. Finely chop one clove of garlic. Add enough olive oil to cover the pan. Lower heat to low and add garlic. Peel and chop eggplant. Add the eggplant to the pan and stir. Turn the heat back up to medium, and add more olive oil if needed. Cook uncovered for 10 minutes, stirring occasionally. Add a half of teaspoon of salt and pepper. Chop the pepper, onion, tomato (I use plum), and  mushrooms if needed. I use about a half of cup of mushrooms. Add the peppers first. Let cook for a few minutes, then add the onion. Allow that to cook for a few minutes before adding the mushrooms and tomatoes. Continue cooking for about 5 more minutes. Stir in a pinch more of salt and pepper. For a bit of a spice, add a teaspoon of chili pepper flakes. Stir in about four tablespoons of tomato sauce. Remove from heat. Place in the oven for about 5 minutes. Sprinkle mozzarella cheese on top and cook for another 5-10 minutes. (Until eggplant is tender.) Enjoy!
