Happy HAUNTober Eve!

Hey guys! Tomorrow is October 1st! How exciting?! Unfortunately, I'm still sick. Boo...and I don't mean boo as in trick or treat boo as in boo whoo! I just want to get better so I can enjoy the fall already!
On my youtube channel, I am doing HAUNTober again! It's a series I do during Halloween.

Cinnamon and Brown Sugar Porridge

So nobody here really calls it Porridge, but Porridge just sounds better than Oatmeal! It reminds me of Goldilocks and the Three Bears or Harry Potter. So I'm calling it porridge.
Honestly, I am not a huge Oatmeal fan. I much prefer Cream of Wheat. If I'm going to eat Oatmeal it has to have a little..umph to it!
Here's my recipe.

Ingredients:
1 cup of milk.
1/2 cup of oats.
1 teaspoon of light brown sugar.
1 tablespoon of cinnamon.
1 1/2 teaspoon of white sugar.
Raisins

In a small pot on medium heat, add a cup of milk. Stir in oats. While the porridge is cooking, add a teaspoon of brown sugar.
Remove from heat. Add cinnamon, white sugar, and raisins.
Then enjoy!

Things To Do In The Fall!

Fall is officially here as of yesterday! It's my favorite time of year, and I'm sick! :'( I have Chronic Bronchitis. Boo! Hopefully you guys are able to enjoy the lovely weather and all the great things you can do right now. If you're able, grab your family and get a move on on these fun Fall activities.

Go for a walk in the park!


There is almost always a lovely park somewhere around you to venture in. There are tons near/nearish to me that I've been to, and I live in a pretty urban city.
Even if you have to drive a little bit, it's worth. I love to get in the car with my dog Lacey and my boyfriend and enjoy a walk in the park.





Go apple picking and to a pumpkin patch!


This is great if you have kids, because most apple picking farms will have a lot of family events such as hayrides, pumpkin patches, pony rides, etc.
Then take those apples home and make apple crumble, apple pie, candy apples, and more.

Carve/paint a pumpkin!

This speaks for its self. If your children are too young to help carve a pumpkin, they can always paint some. I carved my first one last year. I know, I know...I'm a late bloomer. My mom never bought pumpkins when I was young. I finally decided to carve one. It's not perfect, but for my first one, I'd say it's not half bad!






Attempt to make a homemade pumpkin pie!

Now I never actually made a homemade pumpkin pie, but I will be attempting to very soon. That is, if this damn bronchitis goes away!
I will for sure blog about it...even if it's awful. haha






Decorate for Halloween!


Yeah, it's never too early and tons of fun!








Watch Hocus Pocus!

Because it's a classic! I make my boyfriend watch it. Also scary movies and Halloween Town!

Spinach Pasta with Tomatoes



This pasta is very easy to make and is something my whole family can agree on, even the kids! Well...not my nephew. He use to like this, but now he's on this "I don't eat healthy food" kick.
God bless my sister! It's quite annoying.


Ingredients:
1 Box of pasta.
Olive oil
2 Cloves of garlic.
1 Bag of frozen spinach.
1 Tomato
Salt and pepper
Parmesan cheese

Honestly, I eyeball 90% of the things I make. This dish is no different, however, this is one of those dishes that you can do just that with.
Thaw a bag of frozen spinach.
Boil 1 box of pasta. I use Penne.
While that is boiling, heat a small saucepan. Coat the pan with olive oil.
Add the what shall now be once frozen spinach. I have tried this recipe with frozen, fresh, and can spinach. The texture and taste of the frozen spinach just always seems to work best with this dish.
Stir and let sit on low heat. The goal is to warm the spinach.
Now you want to chop the garlic. I like to chop mine as small as I can.
Personally, I love garlic, but not everyone wants to bite into a chunk of garlic.
I then add it to the saucepan with the spinach and some salt and a dash of pepper.
Stir and let sit. Chop one tomato and sit to the side for later.
Once the pasta is tender, drain.
The spinach should now be nice and warm also.
To make sure everything is mixed well, I add a layer of pasta and then a layer of the spinach and garlic, tomato, and then sprinkle some Parmesan cheese. I continue this method until I'm out of ingredients.
Add a little more Olive Oil...about 3 tablespoons I'd say. Stir in some salt to taste and sprinkle a little Parmesan cheese on top, and you're done!

Homemade Apple Crisp/Crumble Recipe

My first Fall post! Yayyy!!! Is anyone else as excited as I am for Fall?
I figured this was a great way to start off the Fall blog posts. Apples are in season and I don't know about you guys, but I am most definitely going apple picking. FYI, there will probably be a lot of apple posts this year. haha
This recipe is super simple and everyone likes apples right?
This will be great for the Holidays, a great way to use up extra apples, and a fun treat to make with the kids.
Before we get started, I didn't peel my apples out of laziness, but feel free to. I actuallt probably would have preferred to. I just hate peeling!

Ingredients:
Apples (I used McIntosh)
White Sugar
Flour
Cinnamon
Water
Quick Cooking Oats
Brown Sugar
Baking Powder
Baking Soda
Melted Butter

Directions:
Preheat oven to 350 degrees.
Core, peel (if you want), and slice about 7 cups of apples. I sliced mine about 1 inch thick. 
Place the sliced apples in a pan. Sprinkle 1/2 cup of white sugar, 1 tablespoon of flour, 1 teaspoon of cinnamon (You can add more if you really like cinnamon. I think I added a teaspoon and a half.), and then pour in 1/3 cup of water.
In a bowl, add 1/2 cup of oats, 1/3 cup of flour, 1/2 cup of brown sugar, 1/4 teaspoon of baking powder and baking soda, and 1/3 cup cup of melted butter to bind. Carefully mix together. I started off with a spoon, so that the butter wouldn't burn my hand. Then I used my hands once the butter absorbed a bit. Using your hands is the fun way!
Crumble over the apples and cook for 45 minutes.

I hope you enjoy this classic recipe. I may make this during Thanksgiving. It's between this and the bread pudding I made last year, which was a big hit. Or maybe both!

Camping at Hickory Run State Park!

Hey guys! This is going to be another blog filled with pictures! I went camping at Hickory Run State Park, which is located in White Haven, Pa.
The park kind of combines modern camping with old school camping. There are cottages, deluxe cottages, and tents. Some campsites come with running water and flush able toilets, while others do not.
We got a deluxe cottage, but had no running water or flush able toilets. We wanted a regular cottage,(one with less beds, no stove, microwave, or refrigerator) but they were booked. We didn't use the stove or microwave. We cooked over the fire and our portable grill. We did use the refrigerator so we didn't need to constantly buy ice.

Camping at Hickory Run State Park

Deer Trail:
I feel like I got the best pictures from Deer Trail. The funny thing is, we saw no deer on deer trail, yet they came to our campsite! Four of them!

Hawk Falls:
Hawk Falls was really nice, however there were a lot of tourists there. I normally don't mind tourist at all, but one particular group was really rude! I stood aside for about 15 minutes waiting for them to stop taking pictures. They were mostly taking selfies, which is incredibly annoying! How many pictures of yourself in the same spot do you need?
When they were done, I walked on the bridge next to a lady who was just looking at the creek. I stood next to her to take a picture. She got mad, sighed loudly, and then stomped away. Really though? I just waited 15 minutes for you to stop taking selfies. I take one and your mad? #BYEFELICIA
Other than that one group, it was nice.

Boulder Field:
Boulder Field is really cool! It's so large, goes on forever! The ice age stopped just a mile north of here.













Sand Spring Beach:
The lake was pretty nice. It's not super deep, but deep enough to go dunk under and swim around!

They were so close to our campsite. They were about 5 feet away!
